Amazing Potato and Kale Soup with Zesty Sausage

February 7, 2018 By Nedra McDaniel Leave a Comment

I was invited to tasting and tour at the Bob Evans headquarters with Ohio Pork Farmers. We got to spend time talking to the farmers over lunch as we learned more about what life is like as a modern day farmer who helps provide the pork that we find at our local grocery stores which reminded me of my visit to meet Ohio pork farmer “Uncle Squeals.” We learned so much from the farmers and we also tried lots of amazing foods created by the Bob Evans team with pork products. I was given the challenge to make one of those recipes when I got home.

How to Fake a Fancy Meal on Game Day

September 18, 2017 By Nedra McDaniel Leave a Comment

If you are a parent with kids in sports or any extracurricular activity for that matter, you know how challenging it can be to juggle schedules and meals between practices and games. On a busy day the WORST question my kids can ask is what’s for dinner because I typically have no idea. I love the idea of creating something that is restaurant quality but it’s so intimidating and typically ends in frustration and disappointment for everyone involved.

A Wafer Cookie Pop Recipe That’s Fun and Easy to Make

A Wafer Cookie Pop Recipe That's Fun and Easy to Make

One of the biggest complaints about making cake balls is that they are a bit time consuming. I decided to take a step out of the equation by making wafer balls instead. The taste is wonderful and you don’t have to bake a cake or wait for it to cool, just use wafers that are easy to crunch. (The hardest part is not sampling a few wafers along the way) This 3 ingredient recipe is easy and still tastes great!

Why We Call Meatloaf “Manloaf”

October 22, 2015 By Nedra McDaniel Leave a Comment

Why we call mealoaf MANLOAF

As a mom of boys, I always have to keep my kitchen filled. Their growing appetites have continued to increase over the years as they get older which means that my boys are always searching for something to eat.

Aldi

A few years ago, I started shopping at ALDI more regularly for a few reasons.  I gave up on couponing because it felt like another job and became another source of stress. ALDI was a lifesaver when we experienced an unexpected layoff a few years ago because we could still get a lot of groceries for a low price. Spending less on quality food also allows me to have more money in our budget for what I actually enjoy spending money on which is more travel and adventure.

I was given a challenge by ALDI to create a $10 dinner. I like a challenge and I thought this recipe would be the perfect one to share for a “meat and potatoes” type of family.

I discovered that sometimes the title of a recipe can make all of the difference when I’m asked “What’s for Dinner?”So we call meatloaf “Manloaf” in our house. Meatloaf just didn’t sound as cool. It also doesn’t hurt that their dad helps me make it so it has a manly touch.

Manloaf Meatloaf Recipe

Why we call meatloaf “Manloaf”
Recipe Type: Meatloaf
Cuisine: dinner
Author: Adventure Mom
Prep time: 10 mins
Cook time: 70 mins
Total time: 1 hour 20 mins
A meatloaf that is kid approved
Ingredients
  • 1 Cup bread crumbs
  • 1.5 lb ground 80/20 ground beef
  • 1 onion chopped small
  • 1 egg
  • 1 can condensed vegetable soup with beef stock (optional)
  • salt and pepper
  • Meatloaf Glace
  • 2 Tablespoons Brown Sugar
  • 2 Tablespoons Mustard
  • 1/2 Cup Ketchup
  • Dash of Crushed Red Pepper
Instructions
  1. Mix meatloaf ingredients together into a bowl. Place meatloaf in a pan in a loaf shape. (For Manloaf we made ours in the shape of a football)
  2. Mix together the ingredients for the glace in a separate bowl. Pour over the meatloaf and spread to make sure that all areas are covered.
  3. Bake in the oven for 1hr 10 minutes at 350 degrees

Manloaf Meatloaf recipe

The glace definitely makes the difference for this recipe. The can of vegetable soup for the meatloaf is optional because sometimes you can get away with sneaking extra veggies in and sometimes you just can’t depending on your kids’ preferences. If your kids don’t like the texture from items in vegetable soup, you will definitely want to remove it from the recipe. My family also loves the prepackaged Caesar salads which add some greens.

This is a great meal that is simple to make, filling and budget friendly.
