Behind the Scenes at Bruegger’s Bagels

A few weeks ago, I joined a few area bloggers to learn more about Bruegger’s Bagels from Corporate Executive Chef, Philip Smith.

Bruegger’s Bagels are made with 5 main ingredients. It is refreshing to be able to pronounce what is in their bagels; water, salt, flour, salt and yeast. Their style is based on the 3,000 year old tradition of artisan baking.

Their cream cheese is also made with a simpler approach and still keeps the whey which contains more protein. Their cream cheese is thicker and stiffer than other cream cheeses so that it stays on a hot bagel.  Their cream cheeses are made 100% in Vermont with fresh ingredients like veggies and walnuts kept crisp without preservatives. The honey walnut was one of my favorites.

We tried several bagels including the newest bagel flavor, Morning Glory. It has apple butter folded into the dough, shredded carrots, raisins, sunflower seeds and cinnamon.

The Rosemary Olive Oil bagel was another really unique bagel that I thought was really flavorful.

During our visit we got to watch the process of making bagels. The bagels are kettle boiled and then baked in a stone hearth oven. Each Bruegger’s Bagels is operated like a neighborhood bakery. Bagels are baked fresh all day, every day.

Each bagel is inspected to meet a high standard.

We got to try an amazing breakfast sandwich with one of my favorite ingredients…sriracha! The Sriracha Egg Sandwich has egg, sausage, cheddar cheese,fresh red peppers and Sriracha sauce.
