My older son decided to mix it up this year with his birthday dessert. He requested a giant no-bake cookie instead of a cake.
I was happy to grant his request because:
1.) no-bake cookies are WAY easier to make than a cake and icing from scratch and 2.) I love no-bake cookies too.
I thought I would share the recipe in case you want to create one too.
My husband has already requested a no bake cookie cake for his birthday after tasting my son’s.
No Bake Cookie Cake Recipe
- 6 Cups of quick-cooking oats
- 2 Cups of White Sugar
- 1 Cup of Milk
- 1 Cup of Butter
- 8 Tablespoons Unsweetened Cocoa Powder
- I Cup of Creamy or Crunchy Peanut Butter
Combine sugar, milk, butter, and cocoa powder in a medium saucepan. Stir and bring to a boil for 1 1/2 minutes.
Remove from heat and add oats and peanut butter. Mix all of the ingredients.
Put aluminum foil or parchment paper on a baking sheet and add the mixture to create a giant cookie.
Refrigerate to harden.
Best served with ice cream

Loved it!! We had chocolate chips instead of cocoa and tasted just as good I’m sure! Thank you for this recipe it’s almost a monthly made now after making it for my dad’s bday.
