My older son decided to mix it up this year with his birthday dessert.
This year he wanted a giant no bake cookie instead of a cake. I was happy to grant his request because 1.) no bake cookies are WAY easier to make than a cake and icing from scratch and 2.) I love no bake cookies too.
I thought I would share the recipe in case you want to create one too.
My husband has already requested a no bake cookie cake for his birthday after tasting my son’s.
- 6 Cups of quick cooking oats
- 2 Cups of White Sugar
- 1 Cup of Milk
- 1 Cup of Butter
- 8 Tablespoons Unsweetened Cocoa Powder
- I Cup of Creamy or Crunchy Peanut Butter
- Combine sugar, milk, butter, and cocoa powder in a medium saucepan. Stir and bring to a boil for 1½ minutes. Remove from heat and add oats and peanut butter. Mix all of the ingredients. Put aluminum foil or parchment paper on a baking sheet and add the mixture to create a giant cookie. Refrigerate to harden. Best served with ice cream (Breyer's Blast Girl Scout Thin Mints flavor is AMAZING on top!)
