Sometimes it can be a challenge to get men involved with preparing dinner. This Drunken Hen Griller recipe has two elements that they are sure to love.

What guy doesn’t enjoy any excuse to fire up the grill while drinking a cold one.
- If you are using a charcoal grill, fire it up first. If you are using a gas grill, you can wait until it’s time to put to the hen on the grill. You will be using indirect heat to cook the hen so only put charcoal on one side of the grill or only fire one half of the gas grill.
What you need
Beer of choice (you will need 3 ounces and you can drink the leftovers)
Tyson® Premium Cornish Hens (We purchased ours from Kroger)
The chickens are already individually bagged do you don’t have to deal with a mess. They are 100% natural so you don’t have to worry about artificial ingredients or hormones either.
Rub Ingredients
First thing to prepare (The Rub)
- 1 teaspoon oregano
- 3 tbsp smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon All Spice
- salt and pepper to taste
- 1 teaspoon ground garlic
- 1 teaspoon Brown Sugar (optional)
Use a liberal amount of the rub and literally massage the spice rub all over the hen. Don’t forget to also place underneath the skin of the hen.
Next step
1/2 Tablespoon Melted Butter
3 oz. Beer (We used a local craft Pale Ale beer)
Mixed together Melted butter and beer and leftover rub into a glass container small enough to fit into the cavity of the hen. We used a smaller glass Mason jar. The glass will need to be a snug fit. Place the hen with the glass on a disposable pie tin.
How long does it take?
Place the pie tin on the non heated side of the grill for 1-1.25 hours. Turn the bird at the 30 minute mark to cook evenly.
The next step is turning your drunken hen into a griller. My boys love when I serve burritos as grillers.
First, cut the meat from the hen into smaller pieces and add to a flour tortilla.
We like to also include cheese, onions, and salsa inside the griller.
Place the rolled up tortilla onto a grill skillet or the grill. Rotate until you see grill marks on both sides.
The Drunken Hen Griller tastes wonderful and plates beautifully.
Garnish the griller cilantro and sour cream.
